Tofoo Nuggets with Cowboy Beans

Get this Stuff

  1. 1 Pack of Tofoo Nuggets
  2. 2 cloves of garlic
  3. 1 400g tin of chopped tomatoes
  4. 1 tbsp tomato puree
  5. 2 tsp dark soy sauce
  6. 2 tsp balsamic vinegar
  7. 2 tsp smoked paprika
  8. ½ tsp cayenne pepper
  9. 1 400g tin of mixed beans (or just cannellini beans)

To Serve

  1. Handful of salad leaves
  2. A dollop of sour cream or vegan crème fraiche
Do this stuff
  1. Place Tofoo Nuggets on a baking tray and bake in the oven for 20 minutes turning halfway through as per the cooking instructions.
  2. In a pan put the tinned tomatoes, tomato puree, soy sauce, vinegar, paprika and cayenne. Give it a good stir. Peel and finely chop the garlic and add to the pan. Bring to the boil then reduce the heat to a gentle simmer.
  3. Once the sauce has thickened slightly, drain and rinse the beans then add to the pan. Give it a good stir and simmer for about 5 minutes until the beans are warmed through.
  4. Put the cooked beans and Nuggets on a plate and serve with a handful of salad leaves and a dollop of sour cream or vegan crème fraiche.
