1 400g tin of mixed beans (or just cannellini beans)
Handful of salad leaves
A dollop of sour cream or vegan crème fraiche
Do this stuff
Place Tofoo Nuggets on a baking tray and bake in the oven for 20 minutes turning halfway through as per the cooking instructions.
In a pan put the tinned tomatoes, tomato puree, soy sauce, vinegar, paprika and cayenne. Give it a good stir. Peel and finely chop the garlic and add to the pan. Bring to the boil then reduce the heat to a gentle simmer.
Once the sauce has thickened slightly, drain and rinse the beans then add to the pan. Give it a good stir and simmer for about 5 minutes until the beans are warmed through.
Put the cooked beans and Nuggets on a plate and serve with a handful of salad leaves and a dollop of sour cream or vegan crème fraiche.
