Teriyaki Tofoo Sunomo Salad

Ingredients
- 1 pack Teriyaki Tofoo
- 1 whole cucumber
- 2 medium carrots
- 200g dried soba noodles
- 2 tsp salt
- 3 tbsp rice wine vinegar
- 2 tsp sugar
- 1 tsp light soy sauce
- 2 tsp sesame oil
- 1 tbsp sesame seeds
- 1 red chilli
Get started
- Cook the soba noodles according to the packet instructions, drain then rinse in cold water to cool.
- Peel and chop the cucumber into chunks then place in a bowl with the salt and leave for 10 minutes.
- Drain the salted cucumber and pat dry with a paper towel.
- Peel and shred/grate the carrot into a bowl then add the cucumber and noodles.
- Cut the Tofoo into strips then add to the bowl along with the vinegar, sugar, sesame oil and soy sauce.
- Toast the sesame seeds in a dry pan then add to the salad and mix well.
- Serve the salad sprinkled with chopped red chilli.
