Teriyaki Tofoo Sunomo Salad

Ingredients

  1. 1 pack Teriyaki Tofoo
  2. 1 whole cucumber
  3. 2 medium carrots
  4. 200g dried soba noodles
  5. 2 tsp salt
  6. 3 tbsp rice wine vinegar
  7. 2 tsp sugar
  8. 1 tsp light soy sauce
  9. 2 tsp sesame oil
  10. 1 tbsp sesame seeds
  11. 1 red chilli

Get started

  1. Cook the soba noodles according to the packet instructions, drain then rinse in cold water to cool.
  2. Peel and chop the cucumber into chunks then place in a bowl with the salt and leave for 10 minutes.
  3. Drain the salted cucumber and pat dry with a paper towel.
  4. Peel and shred/grate the carrot into a bowl then add the cucumber and noodles.
  5. Cut the Tofoo into strips then add to the bowl along with the vinegar, sugar, sesame oil and soy sauce.
  6. Toast the sesame seeds in a dry pan then add to the salad and mix well.
  7. Serve the salad sprinkled with chopped red chilli.
