Tofoo Nuggets with Cajun Wedges

  1. 1 pack Tofoo Nuggets
  2. 2 tbsp olive oil
  3. 400g sweet potato
  4. 1 tbsp Cajun seasoning
  5. 200g soft cheese/vegan soft cheese
  6. 60g pepperdew sweet peppers
  7. 30g jarred green jalapeno peppers
  8. Handful of fresh chives
  9. ½ tsp smoked paprika
Do this stuff
  1. Preheat the oven to 180°C.
  2. Peel and cut the sweet potatoes into wedges. Toss with the oil and Cajun seasoning, season with salt and pepper and place on a baking tray and bake in the oven for 30-35 mins.
  3. Place the Tofoo Nuggets on a baking tray and bake in the oven for 20 mins.
  4. To make the pimento cheese dip — place the soft cheese in a bowl and stir to loosen.
  5. Finely chop the pepperdew peppers, jalapenos and chives then add to the cream cheese. Season with salt and pepper then mix well.
  6. When the wedges and Nuggets are ready, arrange on a serving plate and serve with the dip
