Ingredients
Crispy Tofoo, Brie & Cranberry Toastie

4 slices of Naked Tofoo, dried and floured

2 slices of white bread, toasted on one side

4 slices of Brie (or vegan alternative)

2 tbsp of cranberry sauce
Smoked Tofoo Toastie with Red Leicester and Spring Onion

2 slices of brown bread, toasted on one side

3 slices of Red Leicester (or vegan alternative)

2 tbsp spring onion, chopped

2 tbsp maple syrup
-
2 tbsp dark soy sauce

1 tsp rice wine vinegar
Tofoo Bacon Toastie with Cheddar Cheese and Spinach

6 slices of Smoked Tofoo Bacon (for recipe click here)

2 slices of white bread, toasted on one side
-
3 slices of cheddar (or vegan alternative)

50g spinach

Crispy Tofoo, Brie & Cranberry Toastie
- Preheat the oven to 180°c.
- Shallow Fry the floured Tofoo slices in 2cm of vegetable oil for 4 minutes on each side. Remove from the oil allow to cool on a few sheets of kitchen roll.
- On the bread and layer up the sliced Brie, crispy Tofoo and cranberry sauce on the toasted side, then top with the second bit of bread toasted side down and place on a large baking tray.
- Under a hot grill toast the toastie top, once golden turn the toastie upside down and toast the other side until golden. Now place the tray in the oven and bake for 12 mins or until the cheese is fully melted. Remove from the tray cut the toastie into half or quarters and serve.
Smoked Tofoo Toastie with Red Leicester and Spring Onion
- Preheat the oven to 180°c.
- Heat a griddle pan on the hob to a medium high heat, brush the sliced Smoked Tofoo with oil and place in the hot griddle pan for 2 minutes, turn each piece 45 degrees for a further 2 minutes, turn each piece over and repeat. Pour over the glaze and turn each piece again so the slices are coated. Remove from the heat and on the toasted side of the bread layer on the cheese, glazed Tofoo and spring onions, top toasted side down with the other slice of bread and put on the baking tray.
- Under a hot grill toast the toastie top, once golden turn the toastie upside down and toast the other side until golden. Now place the tray in the oven and bake for 12 mins or until the cheese is fully melted. Remove from the tray cut the toastie into half or quarters and serve.
Tofoo Bacon Toastie with Cheddar Cheese and Spinach
- Preheat the oven to 180°c.
- In a saucepan bring 100ml of water to the boil, add the spinach and stir until wilted. Drain and on a clean t-towel pat dry.
- On one slice of bread layer the Tofoo bacon, cheddar cheese and wilted spinach (toasted side up). Top with the other slice toasted side down and place on a baking tray.
- Under a hot grill toast the toastie top, once golden turn the toastie upside down and toast the other side until golden. Now place the tray in the oven and bake for 12 mins or until the cheese is fully melted. Remove from the tray cut the toastie into half or quarters and serve.
