Smoked Tofoo Chipotle Tacos

Ingredients

1/2 a block of Smoked Tofoo

½ red onion

1 Avocado

1/2 small green cabbage

Tortilla wraps or mini wraps

1 tablespoon plain yoghurt (or vegan yoghurt)

1 tsp chipotle paste

1 tsp maple syrup or honey

1 tbsp cider or white wine vinegar

1 lime

¼ teaspoon caster sugar

Coriander to garnish

  1. Preheat oven to 180°c (fan) Using a box grater, coarsely grate the Tofoo block so it looks like shredded cheese. Place in a bowl. Mix together the chipotle paste together with a little oil, the maple syrup or honey, pour this over the grated Tofoo and mix well so the shredded Tofoo. Line a baking tray with foil or baking paper. Tip out the Tofoo onto the tray and cook for 15 minuets.
  2. Finely slice the onion into strips place in a bowl and toss through the vinegar and sugar along with a pinch of sugar and leave to pickle.
  3. Shred the cabbage and place in a bowl. Mix in a little lime juice.
  4. Slice the avocado in half and carefully remove the stone. Scoop out the flesh and mash with a fork and mix in a little fresh lime juice. Season well and set aside.
  5. Gently warm the wraps in a hot frying pan and keep warm in foil or a clean tea towel. When the Tofoo is cooked serve everything together, family style and build your tacos however you wish.
