Ingredients
- 1 pack Smoked Tofoo
- 2 tbsp vegetable oil
- 150g crunchy peanut butter
- 150g coconut milk
- 2 tsp dark soy sauce
- 1 lime (1 wedge reserved)
- 100g mangetout
- 1 red pepper
- 50g roasted peanuts
- 1 tsp chilli flakes
To Serve
- Steamed rice
- Reserved wedge of lime
Get started
- Dice the Tofoo into cubes.
- Heat a frying pan or wok and add the oil.
- Pan fry the Tofoo until golden and crispy.
- Add the peanut butter, coconut milk, soy sauce and the juice of 1 lime to the pan.
- Stir and add a splash of water to loosen.
- Add the mangetout and sliced pepper and stir fry until the veggies are cooked.
- Crush the peanuts.
- Serve the stir fry with rice and sprinkle with crushed peanuts, chilli flakes and the lime wedge.
