Tofoo Tandoori Kebabs

For the Kebab
  1. 1 block Tofoo, cut into kebab dices
  2. 1 red onion (optional)
  3. 1 courgette (optional)
  4. 1 yellow pepper (optional)
  5. 2 flatbread / naan breads
  6. 2 large red chillies for garnish
For the Marinade
  1. ½ tsp turmeric powder
  2. 1 tsp cumin powder
  3. 1 tsp coriander powder
  4. 1 tbsp kashmiri chilli powder
  5. 2 tsp tomato paste
  6. 1 tsp garam masala
  7. 1 tbsp freshly grated ginger
  8. 1 tbsp chopped garlic
  9. 2 tbsp yoghurt
  10. ½ tsp salt
  11. Juice of ½ lemon

 

Do this stuff
  1. Cut the Tofoo into large dices and then gently rub the mixed marinade all over the cubes.
  2. Grill, pan fry or roast the Tofoo kebabs on a high heat until charred lightly around the edges. Place on top of a flat bread or naan and garnish with some fresh chilli, mint and coriander leaves and a dollop of yogurt if desired.
