Tofoo, Sage and Onion Stuffed Mushrooms

For the Base

  1. 280g Naked/Smoked Tofoo
  2. 200g onion (chopped)
  3. 2 tbsp olive oil
  4. 50g vegan margarine
  5. 1 tsp fresh sage (chopped)
  6. Salt and pepper to taste
  7. 50g breadcrumbs
  8. 8 Portobello mushrooms (stalks removed)
Do this stuff
  1. Preheat the grill.
  2. Heat the oil in a frying pan. Fry the onions until soft.
  3. Mash your Tofoo.
  4. Add the Tofoo, sage and any seasoning. Fry until cooked through.
  5. Stir through the margarine and the breadcrumbs until bound.
  6. Stuff into the mushrooms and grill for 10-15 minutes.
