2inch piece ginger

4 cloves garlic

2 green chillies

1 onion

2 tbsp vegetable oil

1.5 tsp madras curry powder

3 tbsp mango chutney

200ml vegetable stock

1 lemon

Tofoo Pathia Curry
Ingredients

1 pack Naked Tofoo

2inch piece ginger

4 cloves garlic

2 green chillies

1 onion

2 tbsp vegetable oil

1.5 tsp madras curry powder

3 tbsp mango chutney

200ml vegetable stock

1 lemon

To serve

Naan bread

Pilau rice

Method

Underline

1. Finely chop the ginger, garlic, and green chillies and dice the onion.

2. Heat a pan and add the oil. Add all chopped ingredients to the pan.

3. Fry on a medium heat until softened then add the madras powder.

4. Fry until fragrant then cut the Tofoo into strips and add to the pan.

5. Fry for a couple of minutes mixing well then add the mango chutney, stock and the juice of 1 lemon.

6. Cook for a couple of minutes until thickened then serve with pilau rice and naan bread.
