1 carrot

100g Tenderstem broccoli

150g egg noodles

3 tbsp sweet soy sauce

80g cashew nuts

1 tsp sesame oil

Tofoo and Cashew Stir Fry
Ingredients

1 pack of Naked Tofoo 280g

1 tbsp vegetable oil

2 cloves garlic

1 green chilli

1 carrot

100g Tenderstem broccoli

1 red pepper

150g egg noodles

3 tbsp sweet soy sauce

80g cashew nuts

1 tsp sesame oil

Method

Underline

1. Cook the noodles according to the packet instructions. Drain and put to one side.

2. Heat and pan and add the oil. Finely chop the garlic and chilli then add to the pan cooking until lightly golden.

3. Cut the Tofoo into cubes and add to the pan, stir and cook until golden.

4. Peel and slice the carrot then add to the pan and stir fry for a couple of minutes. Next add the broccoli and slices of red pepper, and cook for another couple of minutes.

5. Add the sweet soy sauce followed by the noodles and stir fry everything together. Cook until the noodles are warmed through, adding a splash of water to create a sauce.

6. Add the sesame oil and cashew nuts, stir everything together and then serve.
