Tofoo and Avocado Scramble
Red peppers, avocado, mushrooms and onions along with our best tofu make a great Tofoo and avocado scramble for a healthy breakfast.

Ingredients
- 280g Naked Tofoo
- 1 tbsp Olive Oil
- 1 tbsp Soy Sauce
- 1 Small Onion (diced)
- 1 Clove Garlic (crushed)
- 100g Button Mushrooms
- 1 Red Pepper (diced)
- 1 Avocado (sliced)
- 2 tbsp avocado oil (optional)
- 2 tbsp Fresh Parsley (chopped)
- Toast of choice
Get started
- Heat the olive oil in a large pan.
- Fry the onion, garlic and mushrooms until soft.
- Scramble/mash the Tofoo.
- Add the Tofoo and red pepper to the pan and cook for a further 5 mins. Stir the soy sauce through.
- Share between 2-3 plates. Top with the sliced avocado and drizzle with the avocado oil. Scatter over the parsley.
- Serve with toast.
