280g Naked Tofoo

1 tbsp Olive Oil

1 tbsp Soy Sauce

1 Small Onion (diced)

1 Clove Garlic (crushed)

100g Button Mushrooms

1 Red Pepper (diced)

1 Avocado (sliced)

2 tbsp avocado oil (optional)

2 tbsp Fresh Parsley (chopped)

Toast of choice

Tofoo and Avocado Scramble

280g Naked Tofoo

1 tbsp Olive Oil

1 tbsp Soy Sauce

1 Small Onion (diced)

1 Clove Garlic (crushed)

100g Button Mushrooms

1 Red Pepper (diced)

1 Avocado (sliced)

2 tbsp avocado oil (optional)

2 tbsp Fresh Parsley (chopped)

Toast of choice

Method

Underline

1. Heat the olive oil in a large pan.

2. Fry the onion, garlic and mushrooms until soft.

3. Scramble/mash the Tofoo.

4. Add the Tofoo and red pepper to the pan and cook for a further 5 mins. Stir the soy sauce through.

5. Share between 2-3 plates. Top with the sliced avocado and drizzle with the avocado oil. Scatter over the parsley.

6. Serve with toast.
