Smokey Joe Zinger Wrap

For the Smokey Joe Bites
  • 280g Naked Tofoo, torn into 10g chunks
  • 1 tsp cornflour
  • 1/2 tsp light brown sugar
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp mustard powder
  • 1/4 tsp ground pepper
  • 2 tsp honey or agave syrup
  • 2 heaped tbsp BBQ sauce
  • 1 tsp vegetable oil
For the Zinger mayo
  • 4 heaped tbsp mayonnaise*
  • 4 level tbsp ketchup
  • 4 tsp Worcester sauce*
  • 2 tsp hot sauce
  • 2 tsp Dijon mustard
For the salsa
  • 1 beef tomato, roughly chopped
  • 4 tbsp tinned sweetcorn, drained
  • 4 tbsp coriander, chopped
  • 2 spring onions, finely sliced
  • 4 tsp lime juice
For the rest
  • 4 large soft white tortillas
  • 120g iceberg lettuce, shredded
  • 120g cheddar, grated*
  • 4 heaped tbsp crushed tortilla chips

* or vegan alternative

Do this stuff
  1. Start by preparing the Smokey Joe Bites. Mix all dry Smokey Joe seasoning ingredients in a small bowl. Stir in the agave and
    BBQ sauce.
  2. In a large tupperware container, add the torn Tofoo chunks and veg oil. Place the lid on and shake until the Tofoo is evenly covered.
  3. Add the Smokey Joe mix, place the lid back on and toss again so that all the torn Tofoo chunks are evenly coated.
  4. Place the Tofoo in your air fryer in a single row, so there is a little space around each piece. Set your air fryer to 210°C. Cook for 10-15 mins, shaking the basket halfway to turn the Tofoo.
  5. While the Tofoo is cooking, start preparing the Zinger Wrap. Mix all Zinger mayo ingredients in a bowl with a pinch of salt
    and pepper. Mix all salsa ingredients in a bowl with a pinch of salt and pepper. Chop/grate any serving elements.
  6. To assemble, lay out your wrap and spread the Zinger mayo across the center horizontally. Top with the shredded lettuce followed by the Smokey Joe Bites. Then add the salsa followed by the grated cheddar and the tortilla chips.
  7. Tuck in the left and right ends of the Zinger Wrap and then roll up like a burrito to secure. Cut in half and enjoy!
