Tofoo Pad Thai
- Serves: 2 people

Ingredients
- 1 pack Naked Tofoo
- 100g dried flat rice noodles
- 1 tbsp vegetable oil
- 150g beansprouts
- 6 spring onions
- 1 red chilli
- 50g salted peanuts crushed
- 2 tbsp sweet soy sauce
- 2 tsp dark soy sauce
- 1 lime – halved
Get started
- Cook the noodles according to packet instructions, drain and set aside.
- Heat a wok or frying pan and add the oil.
- Slice the spring onions and red chilli and add to the pan frying until softened.
- Dice the Tofoo and add to the pan. Fry for a couple of minutes until lightly golden.
- Add the cooked noodles along with the soy sauces.
- Stir fry, tossing the noodles until mixed well.
- Add the beansprouts, mixing well. Cook for a couple of mins until the beansprouts have warmed through.
- Serve with a sprinkling of crushed peanuts and a squeeze of lime.
