Tofoo Pad Thai

Get this stuff
  1. 1 pack Naked Tofoo
  2. 100g dried flat rice noodles
  3. 1 tbsp vegetable oil
  4. 150g beansprouts
  5. 6 spring onions
  6. 1 red chilli
  7. 50g salted peanuts crushed
  8. 2 tbsp sweet soy sauce
  9. 2 tsp dark soy sauce
  10. 1 lime – halved
Do this stuff
  1. Cook the noodles according to packet instructions, drain and set aside.
  2. Heat a wok or frying pan and add the oil.
  3. Slice the spring onions and red chilli and add to the pan frying until softened.
  4. Dice the Tofoo and add to the pan. Fry for a couple of minutes until lightly golden.
  5. Add the cooked noodles along with the soy sauces.
  6. Stir fry, tossing the noodles until mixed well.
  7. Add the beansprouts, mixing well. Cook for a couple of mins until the beansprouts have warmed through.
  8. Serve with a sprinkling of crushed peanuts and a squeeze of lime.
