Black Bean Tofoo for Under £5

For the Tofoo
  • 280g Naked Tofoo, cut into thin squares (£2.15)
  • 1 cup White Rice*
  • 1 tbsp Cornflour*
  • 1 tbsp Olive Oil
  • 1 large White Onion, cut into thin wedges (33p)
  • 1 Green Pepper, cut into strips (50p)
  • 1 Red Pepper, cut into strips (50p)
  • 1 Chilli, finely chopped (23p)
  • 1 tbsp Ginger Puree (26p for 1/5 of a pack)
  • 3 Garlic Cloves, minced (17p for 1/2 bulb)
  • 250g Black Bean Sauce (55p)
  • 1 tbsp Sugar*
  • 1 tbsp Soy Sauce (3p for 1/20 of a bottle)
  • 1 tbsp Rice Wine Vinegar (10p for 1/20 of a bottle)
Optional Extras
  • Spring Onion, sliced
  • 1 tsp Sesame Seeds

Do this stuff
  1. Start by dusting your Tofoo all over with cornflour. Add your rice and 1 1/2 cups of water to a pan and bring to a gentle boil. Reduce heat to low, cover with a lid and cook for 13 mins.
  2. Meanwhile, heat your oil in a large, non-stick pan over a medium heat. Add your Tofoo to the pan and toss about for 5 mins until golden all over. Add your onions, peppers, chilli, ginger and garlic and fry for a further 5 mins until starting to soften and fragrant.
  3. Add your remaining ingredients plus a pinch of pepper and cook for a few mins. Remove your rice from the heat and give a fluff up with a fork. Divide into bowls and top with spring onion and sesame seeds if using. Tuck in!
