Tofoo Akuri

Ingredients

  1. 225g Naked Tofoo
  2. 1 tsb Ghee Easy
  3. 1 shallot (diced)
  4. 2 tbsp garlic (crushed)
  5. 2 tbsp ginger (grated)
  6. 1 red pepper (diced)
  7. 2 large mushrooms (diced)
  8. 1 green chilli (chopped)
  9. ½ tsp turmeric
  10. ½ tsp coriander powder
  11. ½ tsp cumin powder
To Serve
  1. Bunch coriander (chopped)
  2. 2 spring onions (chopped)

Get started

  1. In a frying pan, heat the Ghee and add the shallot, garlic and ginger.
  2. Add the bell pepper, mushrooms, green chilli and salt. Stir for a minute and then add in the dry spices. Sauté for about 5 minutes.
  3. Mash/scramble the Tofoo.
  4. Add the Tofoo to the pan and continue to sauté until cooked through.
  5. Garnish with fresh coriander and spring onion.
