Tofoo Nugget Louisiana Po’boy

Get this stuff

  1. 1 pack Tofoo Nuggets
  2. 2 small baguettes
  3. 2 small tomatoes
  4. 2 large gherkins
  5. Lettuce leaves

For the Louisana sauce

  1. 4 tbsp mayonnaise/vegan mayonnaise
  2. 1/2 tsp paprika
  3. 1 tsp horseradish/vegan horseradish
  4. 1 tsp Dijon mustard/vegan mustard
  5. 1 clove garlic (peeled and grated
  6. 1/s tsp tabasco sauce

Get started

  1. Preheat the oven to 180°C. Place the Tofoo Nuggets on a tray and bake for 20 minutes.
  2. Place all sauce ingredients in a bowl and mix well until combined.
  3. Thinly slice the tomatoes and slice the gherkins into rounds.
  4. Once the Nuggets are cooked, you are ready to assemble the sandwiches.
  5. Spread half of the sauce on the inside of one half of both baguettes.
  6. Fill with the lettuce, tomatoes and gherkins, then the cooked Nuggets.
  7. Drizzle with the remaining sauce and tuck in!
