Ingredients
- 1 pack Smoked Tofoo
- 1 tbsp olive oil
- 1 red onion
- 3 cloves garlic
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp harissa paste
- 400g tin chopped tomatoes
- 150g baby spinach
To Serve
- Warm flatbreads
Get started
- Heat a frying pan and add the olive oil.
- Finely chop the red onion and garlic and add to the pan, frying until softened.
- Add the cumin, paprika and harissa paste and fry for about 1 min until fragrant.
- Add the tinned tomatoes and cook for about 3 mins stirring well.
- Take the Smoked Tofoo and using your hands crumble it into a bowl until it resembles scrambled egg.
- Add to the pan and cook for a further 5 mins until warmed through.
- Add the spinach and cook until wilted.
- Serve with warmed flatbreads.
