Satay Smoked Tofoo Stir Fry

Get this stuff
  1. 1 pack Smoked Tofoo
  2. 2 tbsp vegetable oil
  3. 150g crunchy peanut butter
  4. 150g coconut milk
  5. 2 tsp dark soy sauce
  6. 1 lime (1 wedge reserved)
  7. 100g mangetout
  8. 1 red pepper
  9. 50g roasted peanuts
  10. 1 tsp chilli flakes
To Serve
  1. Steamed rice
  2. Reserved wedge of lime
Do this stuff
  1. Dice the Tofoo into cubes.
  2. Heat a frying pan or wok and add the oil.
  3. Pan fry the Tofoo until golden and crispy.
  4. Add the peanut butter, coconut milk, soy sauce and the juice of 1 lime to the pan.
  5. Stir and add a splash of water to loosen.
  6. Add the mangetout and sliced pepper and stir fry until the veggies are cooked.
  7. Crush the peanuts.
  8. Serve the stir fry with rice and sprinkle with crushed peanuts, chilli flakes and the lime wedge.
