Tofoo Falafel with a Baked Tomato Sauce and Roasted Fennel

1 pack of Tofoo Falafel  

1 head of fennel, cut into 6 wedges 

400g chopped tomatoes 

1 small white onion, finely chopped 

2 anchovies (optional) 

2 tbsp tomato purée  

2 tbsp red wine vinegar  

Pinch of brown sugar  

Do this stuff
  1. Preheat oven to 180°c. 
  2. Heat the Tofoo Falafel according to the cooking instructions. 
  3. Put all of the ingredients for the sauce in the baking tray and mix a little. Add the fennel on top, drizzle with oil and add seasoning. Bake in the oven for 25 mins. 
  4. In a bowl adda good spoonful of the sauce with the roasted fennel and share out the Tofoo Falafel. Grate a little Parmesan over the top to finish the dish.
