Tofoo Falafel Mezze Pitta Bread

Get this Stuff 

1 pack Tofoo Falafel  

2 pitta breads 

2 carrots  

100g pomegranate seeds 

50g salad leaves 

Sweet chilli sauce 

 

For the houmous   

400g tinned chickpeas, washed and drained 

80ml extra virgin olive oil  

2 garlic cloves, peeled 

Juice of one lemon 1/2 of the zest 

3 tsp tahini 

Do this stuff
  1. Preheat oven to 180°c. 
  2. Heat the Tofoo Falafel according to the cooking instructions. 
  3. In a blender blitz all the houmous ingredients for around 5 mins until the houmous is smooth and silky.  
  4. Grate the carrot and wash and dry the salad leaves. Set aside. 
  5. Heat the pitta breads in a toaster and make an opening down one long side. Spread inside with a generous amount of houmous and add salad leaves and grated carrots. Add half of the Tofoo Falafel and the pomegranate seeds and drizzle with sweet chilli sauce.
