Sweet Chilli Bites with a Vermicelli Noodle & Peanut Salad

Get this Stuff 

1 pack of Sweet Chilli Bites 

1 bundle of vermicelli noodles  

100g shelled and skinned peanuts  

200g of mixed leaves 

12 mint leaves 

 

For the Sweet Chilli Dressing  

4 tbsp of sweet chilli sauce 

8 tbsp of extra virgin olive oil 

2 tbsp of lemon juice 

A pinch of soft brown sugar 

Seasoning 

Do this stuff
  1. Preheat the oven to 180°c.   
  2. Place the Sweet Chilli Bites on a baking tray and follow the cooking instructions. 
  3. Bring a saucepan of salted water to the boil and have a bowl of cold water at the ready. Put the bundle of noodles in the hot water and cook for 4 mins (or until white and soft), drain and put them straight into the cold water.  
  4. Next heat two tbsp of olive oil in a frying pan and add your peanuts. Toss until golden and remove from the heat and set aside.  
  5. Wash and dry your salad and drain the noodles well.  
  6. For the dressing, put the sweet chilli sauce, sugar, lemon juice and oil in a jam jar with a well fitted lid and shake it, taste and season.  
  7. Time to assemble the dish. On a board build the salad up in layersadd the noodles and a few more torn lettuce leaves. Dot the whole mint leaves around and sprinkle over the toasted peanuts. Take the Sweet Chilli Bites from the oven and place on the serving board before dressing the whole thing with the sweet chilli dressing.
