1 Pack of Southern Fried Tofoo Bites

2 cloves of garlic

1 400g tin of chopped tomatoes

1 tbsp tomato puree

2 tsp dark soy sauce

2 tsp balsamic vinegar

2 tsp smoked paprika

½ tsp cayenne pepper

1 400g tin of mixed beans (or just cannellini beans)

To Serve

Handful of salad leaves

A dollop of sour cream or vegan crème fraiche

Southern Fried Tofoo Bites with Cowboy Beans

1 Pack of Southern Fried Tofoo Bites

2 cloves of garlic

1 400g tin of chopped tomatoes

1 tbsp tomato puree

2 tsp dark soy sauce

2 tsp balsamic vinegar

2 tsp smoked paprika

½ tsp cayenne pepper

1 400g tin of mixed beans (or just cannellini beans)

To Serve

Handful of salad leaves

A dollop of sour cream or vegan crème fraiche

Method

Underline

1. Place Southern Fried Tofoo Bites on a baking tray and bake in the oven for 20-25 minutes turning halfway through as per the cooking instructions.

2. In a pan put the tinned tomatoes, tomato puree, soy sauce, vinegar, paprika and cayenne. Give it a good stir. Peel and finely chop the garlic and add to the pan. Bring to the boil then reduce the heat to a gentle simmer.

3. Once the sauce has thickened slightly, drain and rinse the beans then add to the pan. Give it a good stir and simmer for about 5 minutes until the beans are warmed through.

4. Put the cooked beans and bites on a plate and serve with a handful of salad leaves and a dollop of sour cream or vegan crème fraiche.
