400g sweet potato

1 tbsp Cajun seasoning

200g soft cheese/vegan soft cheese

60g pepperdew sweet peppers

30g jarred green jalapeno peppers

Handful of fresh chives

tsp smoked paprika

Southern Fried Tofoo Bites with Cajun Wedges

Southern Fried Tofoo Bites with Cajun Wedges

1 pack Southern Fried Tofoo Bites

2 tbsp olive oil

400g sweet potato

1 tbsp Cajun seasoning

200g soft cheese/vegan soft cheese

60g pepperdew sweet peppers

30g jarred green jalapeno peppers

Handful of fresh chives

tsp smoked paprika

Method

Underline

1. Preheat the oven to 180C.

2. Peel and cut the sweet potatoes into wedges. Toss with the oil and Cajun seasoning, season with salt and pepper and place on a baking tray and bake in the oven for 30-35 mins.

3. Place the Southern Fried Tofoo Bites on a baking tray and bake in the oven for 20-25 mins.

4. To make the pimento cheese dip — place the soft cheese in a bowl and stir to loosen.

5. Finely chop the pepperdew peppers, jalapenos and chives then add to the cream cheese. Season with salt and pepper then mix well.

6. When the wedges and Bites are ready, arrange on a serving plate and serve with the dip
