1 pack Spicy Tomato Tofoo Sizzlers

2 tbsp olive oil

1 tbsp Ras El Hanout

1 inch piece fresh ginger

2 garlic cloves

1 lemon (zest and juice)

120g dried apricots

1 400g tin chickpeas (drained and rinsed)

300ml vegetable stock

1 handful fresh coriander

Spicy Tomato Tofoo Sizzlers Tagine
Ingredients

1 pack Spicy Tomato Tofoo Sizzlers

2 tbsp olive oil

1 tbsp Ras El Hanout

1 inch piece fresh ginger

2 garlic cloves

1 lemon (zest and juice)

120g dried apricots

1 400g tin chickpeas (drained and rinsed)

300ml vegetable stock

1 handful fresh coriander

Method

Underline

1. Put a frying pan on the heat and add 1 tbsp olive oil.

2. Pan fry the Sizzlers according to package instructions then put to one side.

3. In the same pan add 1 tbsp olive oil then peel and grate the garlic and ginger and add to the warm pan with the Ras El Hanout.

4. Fry gently until fragrant then add the chickpeas. Roughly chop the apricots and add to the pan with the vegetable stock.

5. Cook until thickened then add the zest of 1 lemon (reserving some for serving) and the juice of half a lemon.

6. Season to taste with salt and pepper.

7. Slice the Sizzlers then add to the pan along with a handful of roughly chopped coriander.

8. Serve with cous cous and a sprinkling of more herbs and lemon zest.
